So here's the latest on my car, it starts great, idles great and even drives not to bad, but I can't figure out why it dies or stalls real bad when I hit the throttle while in gear.
When I mean hit the throttle ill give it a tap off of idle while in gear and it either dies or stalls. What's going on with the carb?

Sounds like either a bad accelerator pump, or restriction in that circuit. Could be a vacuum leak, but that would show as a higher idle, and not smooth. Easy to see if you pull the air cleaner and give it a tap on the throttle. You should see a good squirt of gas go into the carb. Is that a new Edelbrock, rebuilt, or old? May need a new accelerator pump, or rebuild kit if it's older.

Sounds like time for a rebuild if it sat dry for much time.

Latest update, carb works fine just needed a full exhaust instead of open headers and trying to tune it. Finished the exhaust today. Installed the Jegs performance exh. system without the mufflers cause I had my own to put on. Made a small change and installed or made up my own H-pipe. Also install cats to keep it legal. I'm impressed with the sound.
