Appears to run hot?

I was going to suggest that very neck, then you can swivel it clockwise until you can clear the fitting. I doubt your current hose will fit, but I'll bet you can find one with the right size and configuration. Just ask your local parts store guy to let you hunt through their inventory.

once you get the neck clocked where you want it , take a metal cloths hanger and shape it to the outer most points of the neck and radiator. that will give you SOME idea of what to look for

Can anyone tell me what the normal temp and max temp for the sensor in the head between cyl 1 & 3? I know its hotter there, just use to see temps around 180/190 not 200+ on these motors

The answer is, it depends. My first 69, many years ago, was basically a stock 307 with headers. That engine wouldn't go above 180, with the gauge sensor in the head. What temperature thermostat are you running? Out of curiosity, have you checked your ignition timing? Too far retarded or advanced can make the engine run hotter. 200 isn't what I'd consider "too hot", but hotter than I expect it to be. Under what driving conditions does it get there, in traffic or open road?

I haven't pulled the tstat yet, using an infrared temp guage most points are 170/180. Timing is set at 12° advance. East Bay, CA and i pretty much just drive local. Its cleaner having the temp sensor on the head, but would like to know temp feeding at tstat.
