you usually only bore to gain a couple CI. this isnt real big in hp gains but can affect the torque curve. id do a stroker kit if it was me

If I went with a stroker kit, can this be a DIY mod?
My dad is pretty good with cars, and I like to learn as we work on them.

if you have the means to pull the whole motor out and take out its internals, and then balance the whole new rotating assembly then yes.

We don't have the means to pull out the motor
