Default Heat Gauge issues

I am working on a 1999 3.8 Camaro for a friend I ended up putting both lower/ Upper intake gaskets on PITA... but got it completed and started the car & let it run while getting air out of the coolant system while I worked on another problem , I mean car when I came the Camaro's coolant gauge was sitting WHY past 260 , it was pegged out. I assumed it was a bad sensor, went and got a new one & it's doing the same thing. I have verified with a inferred thermometer that is NOT that hot! Has anyone of you ran into an issue like that before ?

Just FYI the owner swears the heat hand was working correct before i worked on it
Also his RPM needle stays @ 7 or more, I'm wondering if it could be something in the cluster or a wiring issue ?

Thanks in advance

look for a grounded wire going to the sensor, did you even unplug it during the original work? check for any wires around the intake to make sure none got squished when you was installing.
