Default wont idle properly

I have an 86 camaro with a 2.8l v6 engine. I am having an issue with stalling and occasional hard starts. The only solution ive found that works is to set the idle much to high. It has a new MAF, IAC, and battery . I cant find any vacuum leaks and i have checked and rechecked all the grounds. the other strange thing is that when i start it as long as the idle is cranked up high it runs and drive but if i turn on my heat or ac it stalls unless i keep my foot on the gas. at this point i am lost so any help would be very much appreciated.

On a second note my radiator fan wont kick in, the thermostat is new, the coolant temp sensor is new. if i unplug the temp sensor the fan will run and stay running at all times this however also causes a noticeable drop in engine power and occasional stalling

Welcome to the club.
First item I suggest is purchase a Haynes manual for reference. It elps a lot.
Ensure intake bellows has no holes.
Operate engine up to operating temp, then turn off engine, IGN switch in OFF, and disconnect battery for about 5 minutes as this resets the ECM.
Connect cable, short OBD connector Pins A to B and turn ign sw to IGN, as this action puts ECM into diagnostic mode and also instructs IAC to extend into its port.
With key on, unplug the IAC connector, turn key off. Now start engine and set MAF base idle rpm using its setscrew on the side, 500-600 RPM.
Turn engine off, reconnect IAC, and turn on ign and let sit for about 15 seconds as this action sets IAC via ECM control. Turn off ignition.
Now start engine and drive it without any accessories on as ECM will re-learn.

Hopefully, when the new IAC was installed, its post was retracted as if it wasn't, then the IAC could be damaged.
Fans SHOULD come on when MAX A/C is selected. The two-terminal temp sensor is for the ECM.

With a reset ECM, adjusted base idle setting, a new air filter, she should be running pretty good.
The more driven, the more learning the ECM gets and keeps making adjustments.
