I plan on making it a SS clone (Just emblems right?) I'm planning on getting the modern SS emblems though:

what do you guys think? they're just emblems, if they dont look good, I could always take them off, sell them and get the original ones.

-Drop in molded carpet kit ?
-Eventually, I'll get a custom built center console with a 8" double-din Pioneer DVD screen with a JL Audio system setup w/ 2 12" subs and a 1000w JL audio amp
and maybe some other minor things later on

Personal preference. If you like the looks of the modern emblems, then go that way. If you are planning on re-sale, then original emblems will be more desirable.
