I had the plugs check recently, all good. It does tend to start then die, then the next turn of the key it will either start fine or just turn over for a while. I've been getting around it temporarily (because I've been lazy about getting it back in the shop because it's been in so many times this year) by just giving it gas as soon as it kicks over.

Yup. As soon as it fires I just blip the throttle so it revs to maybe 1500-2000 rpm for just a second. Cycling the the key a few times to get the fuel pump primed doesn't seem like it's made it act any different. When I crank the first time (not giving any gas) it'll fire/sputter, then die. Then it's luck if it'll either fire up the next attempt, or just turn over for a while without firing.

Try unplugging your MAF and starting it, if it fires up first time it's probably your MAF, it'll run rough once it starts because it has no airflow info but as long as it starts with it unplugged it's pointing towards your MAF sensor

Thanks. I'll try to look into that this weekend. It's possible the new IAC is crap too I've considered. I got both the IAC and TPS and Oreilly and they gave me the wrong TPS. The IAC looks exactly the same except the plug on it faces the opposite direction.

Nothing, Oil coolers where optional thing and GM just added them. They were bought from Mr. Gasket or one of the known aftermarket manufacture. There is no electricity or sensors. It just some pipes that flows oil to the front of the car to be cooled. The IAC (Idle air control) motor. Is a part the fuel injection system and is run by your computer so your car idles at the right RPM. What would make you think they are related?

Well Gorn it was mentioned several time in this thread AND Rock Auto list two different part numbers for the IAC, one with oil cooler and one without. So, my question still stands, what does the oil cooler have to do with the IAC? Or put it another way how can the oil cooler effect the IAC?
