New to Camaros

In my mid 20's, bought a 5th gen Camaro LS about 6 months ago and been loving it since. Oh, and its a manual, my first manual car - learned manual right of the bat with my new 'maro.
Been doing my own oil changes, brake fluid flushes, and some auto tech stuff like upgrading the stereo to a touchscreen android unit with the PAK Audio kit. Also half- installed rearview camera, rear parking sensors, blind spot monitor sensors / system, and wireless steering wheel controls for the stereo unit - all aftermarket. Half-installed because I haven't finished the electrical part and honestly could use help - maybe if anyone on the forum is in the south Florida area and willing and able to help, I'd be grateful and buy them drinks or a nice meal - or might hire an auto tech to help me finish.
To be honest, despite the rivalry between Camaros and Mustangs / Challengers I didn't have much of a preference between getting a Camaro or a Mustang (Although I wasn't really interested in a challenger) and was looking at a good deal for either of those two, but what swayed me in the end was getting a really good deal (Imho) on a used 2010 Camaro LS in a color I love (victory red) with relatively low mileage for its age - 83,000 miles - and few minor accidents / good maintenance history. Between the newer / 5th gen Camaro's and Mustangs, I will say the superior performance of the GM LLT v6 engine with over 300 hp (whereas ford's V6 had a much less entertaining 210 hp) and the 29 mpg highway rating pleased my economical/savings-friendly disposition. I didn't really think I needed the v8, and despite already having experienced some remarks and ridicule/disenfranchisement from fellow 'maro owners with v8s, I sure am happy I don't have a v8 with today's gas prices.
The Camaro has been driving well, taken it to the shop for some repairs already, although I have some doubts and questions which is why I came to this forum. For instance, I'm not quite getting the MPG numbers as estimated by the EPA of 18 city 29 Hwy, despite driving very conservatively almost all the time; now that I am much better at driving manual, I feel my driving should get better MPGs. I am getting more like 13-14 city and 25-26 hwy. I know that 1) those EPA ratings are guidelines and don't always reflect what realizes in the end and 2) MPGs will drop as an engine gets older and with more mileage, but I'd love any tips or help to troubleshoot how to improve my MPG.
I'll try to post photos of the 'maro as it slowly gets transformed with my detailing and additions into an eye-catcher, later on this thread.
