Cliffs notes version: A lighter wheel could produce a fraction of one horsepower, so nothing that would be noticible or justifying new wheels as a HP increasing modification. They can however improve handeling quite a bit because due to their lighter mass they can return to the ground quicker and react quicker in general, so handeling improvements are noticible.

My wife just bought a 1995 Camaro Z28.
It came with 275/40/17 Tires.
On the sidewall it says "Max Pressure 51 LBS".
All the tires were at about 35 LBS, so I put them all up to abot 40 LBS each.
I'm "Old School" and am familiar with the standard 32 PSI Max in a passenger car tire.
So when I saw 51 LBS I got a little spooked.
Any info/opinions would be welcome.

I would go back to 35 PSI for daily driving.

that is the max inflation not the recommended inflation, you only run the tire at max inflation where you have the tire at it's max load ..... go by the tire placard in the drivers door, or check the owners manual
