Get a Hayne's manual. They are very helpful. They have them at the auto parts store, or online. Things like that aren'tper say difficult, just time consuming and labor intensive. Quite a few things you have to do, before you even get to the heads.
Definitely a Haynes to start with, they have a lot of good info, and aren't so huge as to be overwhelming to take in.
One thing to keep in mind, not as important for taking them off, but for putting them back on you NEED a torque wrench.

I'm not sure about the 3.8's, but the 4.3L and a lot of other mfg's are going the way of 'one use' headbolts. Rather then use torque as a final setting, you use a 'deflection' tool to measure the final twist of the bolts. These headbolts shouldn't be reused or re-torqued once set. BMW started this back in the early 80's (at least).
All-Data is a desent online repair manual. Some things aren't well defined but they give you an idea of what has to be done. 1 good thing is you can save the web pages and print them out later when needed. It's something like $20 a year for 1 vehicle.
