Can it be done? If so what are the pros and cons ?

1) Yes.
2) Saves a little weight.
3) No power gain, No AC on hot days, weak defroster.

My question, why?

Someone told me I should remove it for more power. I didnt know if there was any truth to that.

it might give u a little little little bit, but i wouldnt do it for a V6 daily driver, thats more for the V8 track cars, my 78 'maro doesnt have AC at all and i plan on adding it for those hot days lol

The AC does not draw any power if you turn the AC switch off.

according to physics it has to, its one more pully to be pulled there for it is using up energy, it is in no way noticeable, but still

You are talking about 2/10 of a HP to drive an idler pulley, because that is what you really have left when you turn the AC off and disengage the compressor clutch. The weight savings by removing all the AC equipment may gain you 2/100 of a second in a 1/4 mile. But it is your car, and it is not too difficult of a job.
