Need to remove dash trim on my 98 to install new stereo. Is there a way to take off just the center trim that goes around the factory unit/AC Vents.

you should be able to pull off the trim around the stereo that goes from your two vents in the middle all the way down to your ac/heat controls.

It should just be able to pull of and your two vents will come out. When you pull it off you also need to disconnect the wires to your foglights and I believe your second gear shift if yours is the same as mine.
