What would you guys (and gals) do?

I don't think rod length and cubic inches are connected. You can run 6" rods in a 355 (which I think is his plan), a 383, or a 400. The length doesn't affect the displacement. On a side note, your beast looks crazy gnarly. Have you ever let it gallop down the 1/4, and if so, what were your numbers?

I wasn't tryin to talk you out of a 6" rod. I have them myself. My Scat rods are good for about 500hp and 7grand. I speced out a 7/16 cap screw for this reason.(RPM) If your gonna run forced induction or a good size shot, then yes I"d go with the H beam all day. I run hyperutectics so I didn't go overboard with my rods.

Yes, you are right. 6 inch rod with a smaller compression height piston. Let's the piston dwell in the flame front longer with the longer rod.

Also weighed my old pistons versus the new setup:
Old setup with cast and I beams: 1423 grams
New setup with H beams and forged: 1270 grams
Even with the six inch rods I will still be well under the old cast piston and I beam rod setup.

Does anybody still make the teflon buttons, instead of using clips? I remember them from years ago, but the only applications I can find now are for VW air cooled engines.

Until you mentioned them, I'd completely forgotten about those buttons! I haven't seen them in many years!
