Unless you are going to be racing it, I would go with a good dual plane intake manifold, 650 cfm carb with vaccum secondaries, headers and a mild cam.

I'd second that! If keeping gas mileage is a concern, then you don't want more than a mild cam. Don't get wild on duration or you'll end up using lots more gas. I'd stay in the 250-268 degree duration, and not more than around 450 lift.

I'd agree with that mostly, you didn't say if you have a stick or auto trans.
With a stick I'd rather have a Holley 650 spread bore manual secondary double pumper but that's just me.
Gas mileage will be determined by your right foot.

You shouldn't need a wiring harness for those items, if you already have a car. The wiring for those items isn't part of an engine, it's part of the body wiring. I doubt you have an electric fuel pump or water pump too.
If the engine needs a water pump then buy one. If it needs a fuel pump you'll want a mechanical that bolts on the engine on the pass. front side. Might check there to see if it's already there. Get an alternator once you see what plug you have on your harness. Can't say if it's a 1 wire or 2 wire myself, as I'm not sure in '81; might even be a 3 wire???
