One word in your post seriously raised an eye brow. "Supposedly" the body was professionally done. Don't take the seller's word for it. It means zero in terms of the sale.
My best advice is, insist on looking at the car. I mean really looking. If you get resistance from the seller....speed on.
You never mention if the carpeting is back in the car. Is it? Once it's in...you're done. It will be hard to tell the true condition of the floor pans without pulling it out. And looking from underneath won't cut it. It's a two ply pan up front which just happens to sit right on top of the subframe. It's easy to conceal rust damage there.
Next thing that got me...."doors that are good". What does that mean? Door shells that are rust free? Have you priced door internals and glass lately for a 68? And how many times have you installed internals plus glass? I can tell you from experience it's a pain in the *** if it's your first time doing one and you will curse really loudly at least once. And Bandaids aren't included. And what looks "rust free" from the outside could hide all kinds of cancer on the interior of the doors. Just check em. The more you know the better you will be able to make a reasonable offer.
Could you take a photo of the trim tag. I can tell you what you have. Or at least...what they had when the car was new.

If its as good as you describe, id be happy to pay 7-8 k for it. I just paid 9.5 for mine, and it was in simiar condition, but i got a motor and tranny with mine.

any thing less than 10g for a rust free 68 is a steal!!
picked up my rustfree 68 with original 327 swaped powerglide for an m20 and original 308 posi after 25 yr storage for 9400. paint is old and showing but was original corvette bronze car which i wanted.

the vin on a 68 wont tell you jack other than inline 6 or v 8
and trim tag only tells colors!!
