Default rear shocks - 69 camaro

Hi, I am helping my neighbor restore his 69 Camaro and we just installed the rear shocks (Monroe sensatrac 5818). These are the correct shock for a multi-leaf car which this is.
My question is that the shocks are completely extended with no ability to move upward anymore, will this change when we get the engine and trans in the car?
Did the previous owner install incorrect springs and if so how much extension should the shock have i'm guessing 2" beyond ride height?

Thanks

I don't think the engine being out makes a lot of difference in the back of the car.
Prior owner may have had the springs re arched to lift the car for bigger tires.
