You're going to be using your own wiring.
Easiest is in the following order:

30 amp fused hot wire from battery to 30 amp relay (12 gauge wire should be enough) - Other side of this lead goes to the hot wire on the fan.
16 gauge wire from fuse block in car from the "key on" position to thermo switch (and mounting) for the fan, then to the switch side of the relay (plus any other wiring the thermo switch needs) unless the thermo switch operates via ground, then it's the ground wire from the relay to the thermo switch and the wire from "key on" goes directly to the relay.
ground wire from relay to ground, ground wire from fan ground wire to ground.

You should be all wired up once these are connected.

As for temp for the fans to work...with a 180º t-stat, I'd say an on temp of 195º/off temp of 185º should be perfectly fine for a start point....and if the fan seems to run too much, you could try 200/190.

also...are you running A/C? Do you have a dual speed fan or dual fans? If you have A/C and a dual speed fan, wire in a second relay from the A/C on switch to the low speed fan setting or the secondary fan. Wire the engine temp switch to the high speed fan setting.
