Low Engine temperature
69 Camaro with a 350. What is the ideal engine coolant temperature? Temperature usually runs right around 160. I put a 190 thermostat in it and it didn't change. If anything it might have dropped slightly. Appreciate any advice

Gauge or sending unit is not working correctly.
In checking s/unit, measure measure resistance to ground with wire removed.
Then as engine heats up, resistance should decrease and this reduction should show more deflection on gauge.

On my performance builds I always test my thermostat in heated water. Over the years I have found thermostats that would stick or be inaccurate.
