When you unplug the MAF, you force the PCM into open loop operation. In open loop many of the sensors are ignored, and the PCM uses predefined fuel & iginition maps. Being that you probably messed with the MAF when you installed the K&N intake, there is a possibility that the MAF got damaged or improperly installed. The fact that the engine runs better with the MAF disconnected does not automatically mean that the MAF is the cause of trouble.
When in open loop (Speed Density) the PCM only responds to the IAT (Intake Air Temp), MAP (Manifold Absolute Pressure), and timing signals from the Optispark. The other sensors are ignored.

k&n filters can also clog a maf sensor with the oils that are on the filter, normally isnt an issue with chevys but more lux euro cars ie volvo vw bmw

did he try to clean it, the maf can be cleaned. the filter has to set and drain any excess oil before installing even if its not over oiled.
