I need a new thermostat and was wondering what are the pros and cons of a 160 degree thermostat vs. a 180 degree. More horsepower one way or the other, gas mileage, etc.

Biggest thing is that it makes your engine run at a cooler temp. Not sure about HP.

Less ware and tare on the engine and the oil brakes down slower.
