The sensor tends to crap out after awhile. You might try removing it and cleaning the sensor tip and see if that helps or you can replace it. I think they run around $40.

Low coolant sensors were going bad long before Dex-Cool! There is nothing wrong with Dex-Cool when properly used and maintained. A couple of important things are: don't mix it with other types of coolant and be sure your radiator is completely full. If it runs low you will introduce air (oxygen) into the system and that air will then attack the unprotected portions of the cooling system. This is where the sludge complaints come from. Vehicles that I have seen with sludge had radiator caps that were not working properly. When the engine cooled down the caps were not allowing coolant to be sucked back into the radiator and that created the low coolant level with the associated air in the system. Millions and millions of vehicles are working just fine with Dex-Cool.
