Maaco does use some pretty cheap, crap paint. They also do some pretty rough taping and most times are not too careful around weather stripping and badges.
That said, if you do all of the prep work yourself and sand the body yourself, do your own spot repairs, and talk with the manager of the Maaco, you can usually get them to spray what you want (as long as you bring it to them).
I had a Maaco in California paint my '64 Nova years ago and they did a good job of actually spraying the paint I brought. I did all of the body sanding, removed all trim and removed front and rear glass. All they had to do was mask the wheel wells, and the missing glass, wipe it down and spray away.
It looked real good until I sold the car five years later.

the place that does the 250$ job uses a single stage paint, he gets 55 gallon drums of white and tints it himself. body work and masking are pretty bad there, we had done the body work ourselves and i masked the car off. they did a good job spraying it, its clean no orange peal no runs and no debris in the paint. only time will tell if lasts.
As far As Maaco goes, it depends on how good the one in your area is. I had them paint my old (black) 79 Vette a couple years back. I first went in to see their work, and they were painting 3 other Vettes at the time. I went with the top of the line job, base/clear, and the car turned out awesome...so much so, that I didn't color sand and buff afterwards it looked that good. Also had them do their $99 bumper special on my daughter's Crapalier, and that turned out looking too good for the rest of the car. Oh, they did screw up that job slightly though. One of the guys started prepping the bumper, but oops he was working on the rear and I was only getting the front done. Lucky me, I got a two-fer there! Doesn't matter if you go to a big name place, or an independent shop, check out their work first.

Living in a small, rural area as I do, it is really pretty easy to find out how the local mechs are. I just ask around at church and find some folks who had work done on their cars. Then we swap some notes and info before I let anyone tinker with my ride.
There are four shops in my town, and two of them get poor remarks from folks at my church, so I avoid them. The other two shops get decent reviews, and they get my business when I am unable to do the work myself.
