carb or fuel injection

Default carb or fuel injection

To start, I am fairly new to domestics. I was a honda guy, yeah I know I know. I am researching different blocks and heads combs and noticed that many start fuel injected but after mods I noticed a lot of people go carburated. My question is mainly for LS1 and LT1 motors. In stock form they are fuel injected correct? So why do I see so many engine building sites with a carborator on it?

carbs are alot easier to work with in my opinion, if anything goes wrong you dont really need to take apart the whole system, just re-adjust it.

Fuel-injection looks too complicated for me and carbs just look a whole lot simpler, and cheaper.
