High oil pressure?
To the oil pressure issue, water in the oil isn't going to make the pressure gauge read high. It'll make it read low, unless it causes a spun bearing right before she locks up!
Mine is somewhat similiar, it reads the max and then flutters every once and awhile. But my oil is good, gets changed every 3000 miles and never has coolant in it. My engine is strong, but is a little noisy from the water pump because of my past coolant and overheating problem. I don't worry about it. It'll be a 'someday I'll fit it' deal.
As for doing a mechanical test, how would I do that? Would AutoZone have the loan-a-tools that I need, or would I have to take it to a shop?
Yes. it's always read high since I got it. That was one of my first concerns before buying it. But I was told by my dad (who used to drag race) and my boyfriend (he's also a mechanic) that it's not really anything to worry about unless it reads too low. Probably just a bad sensor/sending unit. As long as I check my oil frequently and check everything else, it should be find until I get around to replacing whatever needs replaced. The fluttering kinda seemed to give it away that some sort of sensor was faulty. But I have notice in some other pics of people's camaros that they're oil pressure gauge reads high as well.
I read somewhere too that using the wrong oil weight could cause it to read high, not sure if that's true or not.

I use 10W30 like the manual says. Part of the reason I've been wondering about this is because I'm wondering if I should change my oil weight. However, I know that using the wrong oil weight can radically screw up your ride, so I'm very hesitant to do that.
I read on a different forum that for certain years they used the same sensor for both the v6 and v8 models, which causes the v6 models to read a high pressure even though it isn't really that high. If that's the case, I'll go back to not worrying about it.

Yeah, I wondered the same thing when I got my camaro. I thought maybe the previous owner had put in the wrong weight (he wasn't the brightest crayon in the box with this car, I've had to fix a LOT of his mistakes), so when I did my oil, I put in the recommend weight and it did nothing for the reading. So I guess that wasn't it. But I was told to not worry about it, but that's just in my case. My dad and bf knows cars better than I do.
Sending unit is about $30..easy easy easy thing to replace..just be sure not to cross thread..i had the exact same issue a few months back..really had me worried but once it was replaced all was well. Mine generally runs around 70-75 cold and will go as low as 60 if i get stuck driving in really slow traffic. It is just above the fuel filter a single plug goes into it. Its a fairly cheap way to check if it's your issue, which im pretty convinced it is from what you have said.
. are u saying even without the motor running and the key on its still at max? if so unplug the sensor and turn the key on it sould go to 0 if its the sensor. if the gauge is stuck at max then it could be a grounded wire or grounded inside the sensor or inside the gauge itself
This really shouldn't take a lot of mental dissection to decide what to do.

Your new sending unit is registering way high...
I would try one more sending unit and see what you get. Use a different brand as I suggested earlier, and make sure they give you one that is for your engine (even though some parts store counter workers are brain surgeons in training and their assistance is nothing short of miraculous).
That, or pull the engine, take it all apart, scrub everything with Ajax, and put it back together again (that was sarcasm btw, but it is one suggestion you haven't received yet).
