It is probably because it is too old and nasty. If it is original, you definitely need to change it out.
If it is not that old, you may have another problem that is letting oil or combustion gasses mix with the coolant. But it is most likely just old and needing changing.

How long have you had the car? I ask because I once bought a car that had the same issue. I did not check it until after having the car about six months. I flushed it and the next day a pinhole leak showed up at the intake manifold. I was left with the sneaking feeling someone had put stop leak in the radiator and sold the car. I figured since it worked once lets do it again. I put stop leak back in it and it turned the fluid back to brown but it did stop the leak. I drove the car another few months and unloaded on someone else.

Out with the old in with the new!
Well i just hit 99,000 miles! Coolant has never been changed! But this past wknd i did a flush, it looked pretty nasty. Flushed it 3 times before it went clear! Also did the hoses, and thermostat.
