Are Mids a good choice for more power over the stock headers? They seem to be the easiest to to install and seem to have all the emissions stuff in order already. Whats best for the Tube Diameter, Gauge, and Flange Thickness? Or does it not matter much? I know very little when it comes to exhaust stuff and reading up on it doesn't seem to make it much easier to understand.

Any header will be better than the stock exhaust manifold. Shorties are good, mids are better, LT are best. For mids, 1 5/8 in tube diameter will do fine. The gauge of the steel is just the thickness of the steel. The bigger the number, the thinner the steel is. I believe 16 and 18 gauge are two most common. For flange thickness, a thicker flange will give a better seal and are less prone to leaks. 3/8 in will do.
