Default Engine Temp

2002, SS, LS1, all stock, with 17,000 miles. The engine temp is always at 210 degrees. I have only had this Camaro since November so I have not driven it in the summer. In June with outside temp in the 90's and sitting in traffic on the Hot Rod Power tour will it stay at 210 degrees? or will it get hotter? What is normal for this car? What is the thermostat degrees? Should I get the computer changed for the fans to come on at a lower temp?
Thanks for input.

On my 02 SS, 195 degree stat and gauge indicates on left side of middle (12 noon) mark.
A/C on, needle covers middle mark.
Use temp gun to get an idea.

They do run a bit warm, I've read it's normal and has to do with emissions and it's not a good idea to run them cooler as they are designed to run that warm.
When I first got my '01 SS I had the same concerns but I've run it hard (it's cammed etc,) in hot weather and it's never overheated.

I think if you do a search, you'll find that the 1998 temp sensor has two resistive elements, one that controls the gauge and the other controls the PCM functions. On 1999 and up engines , the temp sensors have only one resistive element and it's signal goes to the PCM and the PCM sends a signal to the gauge to display an approximate temp range that the engine is running instead of an accurate reading of engine temp. If I remember right, this was done because of some kind of customer complaint.
