How is the dash gauge wired? Are you using the same sending unit somehow for both or do they each have individual senders? If you had an infrared temp sensor, I would check to see how the dash gauge compares to the infrared sensor reading at the radiator and the thermostat housing. Could it be possible you had an air lock in the system or the thermostat was stuck in the close position?
