Service engine soon and check engine light are the same. You need to have it scanned for codes so you know what needs attention. The oil pressure will be higher as the engine rpms increase and will decrease when the egnine comes back to idle or low rpms on an engine with some miles. More than likely, the window motor needs replaced. That will cost your about $60 if you do it yourself. A replacement dashpad will set you back a little over $300. Power mirror could be the switch itself or the mirror. If it was the fuse, neither of them would work. Also, it could be the wiring going to that door.

I think that "skip shift" comes on only in a stick shift when you are high in the rpm range in lower gears and it is saying to shift from 1st to 3rd or 3rd to 5th,etc. and therefore, "skipping a shift." Of course that's just my limited understanding as I haven't had the pleasure of driving a manual V8.
Personally, I would be very wary of a Z28 with that many miles, but if it doesn't leak, runs and shifts strong it's tough to make a case against it. If you got the money and like the car just say fuggit, I always do.
Keep in mind though that I paid a NYS dealer $2700 (including tax ) for the black beauty in my profile. It had a little over 88k miles, auto transmission, t-tops (that don't leak). Also had the abs inop light on, the seatbelt light on, and the ASR light on. Passenger door needs to be taken apart and it needs some body work right behind the driverside door. Cars have their pros and cons so make sure to figure that in, hope this gives you something to compare against.
Make sure of two things though:
1.) Under no circumstance should you buy the car without knowing the "check engine" or "service engine" code that is going off. That isn't dealer maintenance, something is wrong. Could be big or small, but you need to know.
2.) Run a carfax/autocheck. They have gotten pretty expensive (about $30 I think) but can save you thousands.
That's my .02. Good luck!
