Running rich will make it run cool, not hot. When did the trouble start and did you make any changes at that timr? Is the fan stock or aftermarket ? Is it big enough? Is it going fast enough ? The fan motor may be sick and running slow. Check you compression, in case u may have a blown head gasket. Forcing hot exhaust into the water jacket makes things get hot real fast, especially with engine under load.

try flushing the system becuase sometimes there can be air bubbles in it and steam is hotter than coolant and it might be triggering the temp gauge to go sky high

I know it sounds strange, but check your spark timing. A retarded spark will make the engine run hot.

heads checked good
2 temp gages both reading same
new head gaskets
50/50 water/dexcool
fan is stock but if it was the fan it would run hot at idle not driving
it cools down at idle
timing is right at the book
prety shure theirs no air bubble
runns real good just hot

Some more ideas:
Make sure the thermostat is turned in the right direction, if it is in backward the water pressure at high RPM will force it shut and engine will overheat.
Could have a collapsing hose. Warm up car till thermostat opens. rev up engine & see if one of the radiator hoses starts to collapse, saw cases where the suction hose was collapsing because it was not stiff enough.
You could also have a corroded impeller on the waterpump, but this is very rare.

Good Luck
