Oh, you wanna go with one of those goofy looking setups huh?
With the carbs, I would slap them on as they are and see how it runs first. One thing I did with mine, was made my linkage slide to make it progressive. Around town and slower driving (less of a lead foot), I'm running off of the front carb only. Then when throttle goes past a certain point on the throttle, they both open up. I changed the linkage connection on the back carb to a lower hole to change the pivot point. That way both carbs are wide open at the same time, even though the back one starts later. The Weiand tunnel ram is pretty much a flat shelf down inside, so the engine will run on one carb.
The stock water pump for yours would be the long style, as long as you're referring to what was on your car originally. The short style was last used in 1968 for the Camaro, and in 1982 for the Vette.

Here is the setup overall.

This shows the linkage on the rear carb. You can see the lock collar with the phillips head screw.
That slides back as the front carb is opening, then hits the collar on the back carb to start and open it.

This shot shows both carbs a little closer than the first pic. You can see how the horizontal rod is fixed to the front carb.
That rod slides freely through the back collar, until the lock collar hits the linkage. I can adjust that to catch anywhere I want.
The rod you see hanging down in the middle is what the throttle cable from the gas pedal is connected to.

I have the "Hilborn" style on mine. You can see part of it in my first picture (my sig pic isn't up to date).
The one you're asking about is called a street scoop, like these: Street Scoop
