Default '79 Camaro 5.7L - Project questions

Hello everyone - just joined.

I'm in the process of bringing back a pretty near stock '79 Camaro back to life after sitting 34 years. I very carefully lubed inside each cylinder and got the engine to turn manually a few full rotations with a wrench, then more lube and it turned over with the starter ok. The gas tank is almost full with old fuel so next is to drain it and flush out the fuel lines. I'll try my best to ask quick questions here as we get this one road worthy together.

It has the original mechanical fuel pump on it. I'm going to see if the engine will fire up with fresh fuel via a separate small tank and gravity feed at first, then and low pressure electric pump just to move the car around. Will running the engine this way damage the stock mechanical fuel pump by running it dry?

When the car is in park or neutral, you can rev it all the way up to 5k and back down without it complaininsg. However, in Drive or Reverse it will idle, but any application of throttle will result in killing the motor. It will rev up under load, but when letting off the throttle, it seems to dip the RPM too low and it kills.
