edelbrocks dont make as much raw horsepower as say a holley or barry grant, but they are easy to tune, and run very smooth. if you are running a stock motor and plan on keeping it less then 320 horsepower, then an edelbrock 600cfm will work fine. i currently have a temporary 600cfm edelbrock on my 350, and it has a good amount of mods, pushing around 360 horsepower, thanks to a desktop dyno, which isnt fully accurate. the carb has awsome throttle response, and runs very smooth, although starves for air at high rpm's.
I have owned both Edelbrock and Holley carbs. I have found both to be fairly good quality and responsiveness, however, they did require a bit more attention than the stock Q jet. I never could get them to run as reliably or as smoothly as the Q jet, I ended up switching back to the Rotchester. I hav'nt had to tinker with a carb since. Keep in mind though, that I am running stock motors.
Anywhere between 400 and 600 CFM anymore on a stock motor and you start overfueling, robbing you of power. Lean is fast, but, it can wreck a motor. Since it's stock I'd suggest leaving the stock Qjet on there, from what I've seen, it can fuel upto about 300 HP. Are you planning some engine mods before you do the carb? Because the carb dos'nt really make HP, it feeds it. You need to increase volumetric efficency(the motors ability to pump air) before you start adding more fuel. Intake, heads, and exhaust do that.
if you do a simple bolt on upgrades such as exhaust, heads and intake, then a holley or barry grant 650cfm is the best suited. i wouldnt advise going bigger, i know a guy that used a 750cfm barry grant on a 454 and it ran like crap on initial launch, way overcarburated. 650cfm is plenty of breathing room.
