I might just go with 325 hp, I just wanted to see if there was any way I could verify it as my hope is to get it back to as close to factory as I can.

Well there were over 235,000 '68 Camaros built, only about 4500 had the 375hp/396 and probably even less spent money on the 350hp upgrade just to gain 25 hp so that's probably a safe bet. The parts to go that route will be a lot less money and far easier to come by as well, the SHP heads and the GM aluminum high rise intake alone are hard items to come by and command pretty good money when available. 325 hp 396's came in a lot of cars, still a lot of them around as well as stock intakes etc.
Frankly unless you want to hot rod the car real hard the 325hp engine is a lot nicer to drive in a lot of ways. The big solid lifter cam is not very traffic friendly (I know I had one in a '69 with a 427) and requires adjustment often. They guzzle gas like nobodys business too heh heh.
Loads of fun to drive but high maintenance and hard on the rest of the drive train too. The 325 hp 396 is still quite a torque monster but has much better manners as a driver, add a mild modern hydraulic performance cam and a good set of headers and she'll have plenty of punch without being too unruly around town.

Me and a friend rebuilt hiz 396 chevy engine and 1968 camaro zz; ground up in late 80'..... We got it done it waz puzhing over 420 hp.! We juzt put the biggezt carborator; header; and hooker muffler on it!!! We brought to my friend dad pro body & engine zhop... Hiz dad zaid we puzhing 410 to 420 hp!!!!
