Temp Sender/Gauge Question
Your engine should reach a minimum temperature as well as a not to exceed temperature. The engine will run less efficiently and can cause problems with internal components. Modern cars run around 230 degrees and with modern coolant its what they are designed to run. So what about older cars, your still shooting for the magic number of around 210 (but it runs less) and should run a thermostat of around 200 to achieve that. If your having cooling issues and your having engine temps you can not easily maintain then you may have radiator cooling and or flow issues. I like mine to get warm and then stay there it helps the engine run better and cleaner..
Up to 5 degrees more (in your instance anyway) is still 5 degrees. But why run the engine so cold though? The pistons, rings, and bearings are designed to expand (all at different rates) when they reach running temperature. 160 isn't yet up to the temperature those components were designed to be run at, so running it colder like that can do an engine more harm than good.
