changing motor mounts to lower the engine won't help unless you also lower the transmission, which can lead to other difficulties.
Second gen Camaros do not have much hood clearance. Have you thought about a low profile hood scoop like the Z28s had on the late second gen Camaros. I have the 80-81 Z28 style scoop on mine:

The GM crate motor I have came with a intake manifold that seemed a bit taller than a low profile intake. With no spacer, a holly 4 barrel, and a 9.5 inch non lowered air cleaner (with 2inch element) I could close the hood. But I had to use a regular nut and not a wing nut.
