Welcome, Can't help with CT area, Are you talking about a roof skin or the whole roof? Those are two very different jobs. First one can be done by any real tech that does metal work. Replacing the whole roof, due to a roll or rust, should be done by someone with access to a frame machine. On any unibody car the roof is very structural.

Hit up some local car shows. Ask the car owners if they had any metal work on the car and who did it. Depending on what you plan on doing with the car you want to find that shop with a waiting list. Depending on your area the longer the wait the better the reputation.
If you are just building a cruiser you may be able to save yourself a few bucks just having it done by a competent crash and dent place. You should be able to find Yelp reviews for those types of shops. Anyplace that can replace a quarter panel can replace a roof skin. I know at the dealer I worked for they did it a lot. If a car would even just bump a semi it could need a new roof panel. Stuff seemed to fall on cars all the time and even some hail damaged cars got new ones before PDR got so common.
