Yep, a cherry picker would definetely help. If you are brave and not worried about sqashing your fingers, you can use jacks under the front damper and tranny tailshaft, but the jacks can slip out of place too easily alowing the engine to drop down.

Naw, should not take anywhere that long.
Raise ebgine slightly with cherry picker to relieve pressure on mount cross bolts
Remove engine mount through bolts on both sides of the engine (separates the two halves of each mount)
Unbolt the transmission mount from crossmember
Raise engine till it touches the cowling, no need to disconnect any other parts.
Unbolt mount halves from engine & from frame
Replace mounts
Lower engine, into position to install the trough bolts. Easier with a helper lowering the engine and you guiding it into position.
Bolt up everything back
Raise ebgine slightly with cherry picker to relieve pressure on mount cross bolts

Didn't realize you had headers on. They may or may not be a problem, but see how much you can raise the engine before they hit things. All you need is enough room to get to bolts that hold the mounts on to the engine.
