the one in his sig looks stock except the wheels, so your pretty much done there. Do you want Natrually aspirated? NOS? I went with a cat-back system first because I hated how quit my V-8 was. I think I'm basically in the same boat you are, ecept i plan on one day rebuilding my entire engine and getting TONS of power out of it (like everyone else I supposed), partly because i love my camaro andpartly because i love building engines. But anyway, I'm just doing bolt on stuff for now until i can afford to rebuild my engine.
I always like to start with just making your engine breath well, see what your stock engine is capable of.

start by reading the tech threads in the forums related to your specific cars. learn what the parts are and what they do. there should be sticky articles in all of the vehicle specific forums

not too read on the lt1, but I would say go with the standards, get an intake, off road or catted y pipe depending on your states laws, and a good catback. those are basic boltons. next I would do headers, throttle body and then start saving up for a head/cam swap.
