Angry Cooling Issues

Just finished a complete rebuild top to bottom on a 96Z28, engine runs great none of my mods are causing problems. Just cannot get the thing to cool, running a stock thermostat at the moment. After it gets up to running temp I get a low coolant light. Have made sure its full MULTIPLE times. Don't think its air locked.....out of ideas. Any thoughts?
