Im just wondering what the pros and cons of doing this would be, is there a high chance of screwing the sensor up? Also id like to know what it would do with stock intake compared to K&N.

Don't do it, there really is a reason that screen is there. It "calms" the air before it gets to the sensor giving the computer a true measure of air flow. Removing it will cause the air to be turbulent and getting a false reading and will not increase air flow on bit.

You just saved yourself about $300+ by not messing with the Maf screen.

honestly it doesnt do a damn thing, right now mines descreened. its a little rougher... i cant notice a difference other than my idle dropped like 50 rpm lol.

lol i really dont think thats a good idea because the MAF sensor is very VERY delicate

It's there to straighten the airflow for the MAF to read. Your filter keeps the bad stuff out.

Some cars don't mind, some do apparently. The Z06 doesn't have a screen over the MAF, you can buy housings that are larger than the stock to put your MAF in (this is actually recommended over a new MAF because it's a ton cheaper!) and they don't have screens in them either.
