Default New to racing a MT car

The drag racing season here in Indy is nearing the end and I would like to take my '83 Z28 with 5sp MT to the track. My son and I have gotten the Buick Regal GS down to 13.3 @ 104 and the Caprice wagon managed a 15.1 @ 90. Now, it's time to do some maintenance on the Camaro and see what it will do. Last year, I took it and couldn't get any traction off the line and it ran something like a 15.0 which is not representative of what it can do. I have new street tires on it, replacing some that were probably 15 years old and now IRP is doing professional track prep on Tuesday nights.
Since all my racing experience is really in an automatic transmission car, how should I launch the Z so as to not smoke the tires for the first 60+ feet?

I would assume that dumping the clutch @ 2500rpm should be somewhat in the range due to the torque of the Z.
