UPDATE: I unplugged the MAF for kicks and giggles... (unplugging the MAF will put the car into speed density mode and will still run). the car still acted up under a load but not as bad. So I went and bought some MAF cleaner, cleaned it per the instructions, ran the car again and now it runs slightly better. It still does the same thing as before but not as bad... Hrmmmmm...
I talked with a guy at work and he tells me that when you turn the key on your ignition, the ECU sends a signal (voltage spike??) to the MAF for it to heat up red hot and cool back down quickly. This keeps the sensor clean. So I had a look at mine and it does NOT glow red hot uppon turning the key on. This COULD be a sign that my ECU is bad...
Can anybody else verify that the MAF wire glows red hot upon turning the ignition key on?? (Not starting the car though)
How can I test the MAP sensor?
I am also in the works of finding somebody with a live data streaming code reader. (Displays sensor info in real time) With that tool, I can watch the voltage of the MAF as I put the car under a load. I can also watch O2 sensor data, TPS data, etc...
Any suggestions?? Comments?? Concerns??

sorry, i just looked again and i see they dont have a program for the v6, but the data cable will still work for you. ive used both and was very happy with both
