engine temperature

The sending unit for the temp gage needs to be immersed in coolant in order to know what the coolant temp is. Since you let the engine run out of coolant, the sending unit had no idea wht the temp was. What it was showing was the temp of the air inside the water jacket.

You need to find out why your coolant level is too low. Do you have a leak (internal or external), or is it just from lack of maintenance?

i had not been checking my water level on the radiator because it was reading normal but the funny thing is that when the temperature in my area dropped the temp of my car was still reading normal. the other thing is that the gauge needle never moves from the same position and thats why im wondering if the gauge is not reading correctly
