yes, is there water in your oil? is there water on the ground?
If there isnt water all over the ground stop driving it till you know where the water
is going. If the water is going into you oil you wont have an engine for long. If the
water is going in the exhaust, you just need to get it fixed now.

Do a pressure test of the coolant system. It will tell you if the head gaskets are blown. If the radiator is pressurizing quickly after start up, then you can bet it is headgaskets. Is there white smoke coming from exhaust?

There are some very simple signs of a head gasket. My guess would be your car had atleast one of these signs. The mechanic told the guy how much it would most likely cost and asked if he wanted it verify. 99% the time verification is just a matter of figuring out what cyclinder is blown and trying to see if there is anything else wrong with the motor.
If you are adding coolant and it is not leaking into a puddle then you are most likely consuming in the combustion chamber. For a short time the head gasket can still work at idle and only leak while driving under load.
Like osduck said, go borrow a pressure tester from autozone and pressure test your coolant system

That was my issue but got it fixed and never better so i would assume you have a bad headgasket

You removing engine to do just the head gaskets or you going to be rebuilding the whole thing? If you are removing the engine to just do the head gaskets, I would go ahead and replace the main seals and possibly the oil pan gasket as well.

Yeah its likely gasket related, cause I pulled the engine on my wife's 96 grand prix 3.1 for the same thing. Just make sure what ever you do, make sure you bleed the air out of the thermostat. Otherwise the car will continue to overheat. But then again, it may be just this simple problem to fix.
