99 Camaro Oil pressure and spray issues
So today I was working on a friends car and i did a new oil/filter change along with replacing the pcv valve. The issue we've been having and I have yet to see a solid answer is that when we get it all done, the oil pressure gauge is all the way up. she turns the car off, then back on and oil starts spraying from the oil filter like there is no tomorrow. is the any fixes or checks I can do to help get her car running?

sounds like the check valve is stuck. It is behind the oil filter mount and if you drive the car like that you will be putting a new engine in it. Trust me here I already had to do it. You need to get the Timing cover gasket set to get the new gasket for the mount. Once you get it off carefully clean the old gasket off both the mount and timing cover. The check valve is a steel rod that has a spring behind it, when pressure builds too high this will allow oil to be pumped back into the pan keeping the pressure around 60 PSI. Clean it up really good, make sure it's bore is good and clean and also that there is nothing wrong with the spring. put some oil on it and put it back into the bore and see if it slides in and out freely, if so reinstall gasket and oil filter mount.

Hmmmm...all was fine before oil/filter change, now pressure is goofy after...that's a coincidence, or is it. Pull the filter and try another new one, different brand. You could have gotten a defective filter. What kind of filter did you use by the way, the crappy failure prone Fram orange one?
