You need a V8 transmission. Is this a T5? they are not strong enough to handle 350. You can get parts off a 3rd gen 305 to mount the T5 in there but the clutch release will be totally different.
If its an automatic it is set up for a V6 and will not handle the torque of a 350. In either situation you are better off finding a transmission designed to go behind a 350.
Have you done your research? Eliminating the PCM in a modern car is a huge pain. You will need to rewire the entire car. Dash , Gages , AC, power windows & lock pretty much everything that connects to the Body control module will need rewired.
Gages seem to be the one everyone underestimates. You can drop a $500 just in getting the gages all working again.

It is fine to use the chassis for a race car type setup. You will need a V8 Kmember (frame) and if you are eliminating the power steering you will need to buy a manual rack and pinion. I would think keeping the power steering would be one of the easiest things to do.
Make sure you do your research. Which would include what your area requires for inspection. Where I live windows, defrosters, wipers need to work. Depending on how you build your motor mounts your carb will be right where the wiper arm run under the cowl. Its easier to figure all this out now then before you are installing the new engine. There is a lot of info out there.
We have had a lot of members start this project and VERY few finish it and some of those who have finished will tell you its not worth it. It may be a lot better to sell your 350 and find a 5.3 out of a pickup. At least they you can find GM parts to fit and not have to make parts.

you would have been better off with a z28 car ,not as much work but still ,you will have quirks to work out for years to come ,3 years later on mine an i got about 98% there ,we did the swap in like 40 hours an was driveing it ,but there is so much mods to do on the monster cars ,looking back would i have done things different, yes an no ,i got quite the head turner ,but probley could have had an ls2 in it ,you will need all new suspenion ,as you will find the old stuff just gets worn out from the power an time ,,an like gorn said ,difference is i did not have to rewire everything just the engine compartment , you will have to tear everything out of the car ,you will need a good wireing guy,we threw away about 50 lbs of wire on mine from just the engine area, only things dont work is the speedo tach water An amp guage ,so i put new ones in there ,an there is a kit that make the speedo work ,i have seen a 454 in one of those but it was a nightmare for the guy an track car later on 60k he has in it ,he had too let a shop take over an paid big for 600hp ,most guys give up on these builds, but you can do it,with those 3.8l cars guys are puting the lsx engines in them ,but it takes very experienced mechanics to do it an alot of work too,its just alot of work ,not trying to discourage you ,but it is how it is the truth ,we have had 100s of guys come hear doing this build ,most we dont hear from much ,again hear is mine but its a z28 modified with a 406
