Overheating/AC Problem

My 01 v6 is having problems overheating as well as with the AC and i think that they might be connected in some way.
My temp gauge is constantly going from the half way mark and into the red even on days when it isnt hot or on short drives (15min). It is constantly cycling between normal temp and overheating seemingly at random (some days are worse than others). Im pretty sure my fans work because I can hear them switch on. It seems to overheat much quicker when i run the AC. To keep the engine under temp i have been putting on the heat at full blast when it starts getting warm and that usually does the trick.
Also my AC dosnt blow non-stop like it should it. It begins blowing normally and then will stop blowing for a little while only to start again a few minutes later. The AC seems to especially stop when i am going faster or am moving and when i slow down it typically starts blowing harder again. The freon is charged so that shouldnt be my problem.
Also just the other night out of the blue when i pulled my key out the car stayed running. The only time this has ever happened before was a few years ago when we were skrewing with the fan relay's. Not sure if it is related or just an out of the blue thing.
Sorry that its so long but my Dad used to help me with my car troubles because im not that car savvy but having moved out i dont have his experience and troubleshooting ability so any and all help/suggestions would be greatly appreciated!

Sorry it took so long for a reply.
1. Nice car. Really. It's clean.
2. Get a cooling pressure tester and test for leaks; you probably have a leak somewhere. Even a pinhole leak will cause the problems you mentioned.
3. Check your oil for coolant, and your coolant for oil.
4. Get an OBDII scanner and pull codes. See what comes up. Your local Autozone, Napa, or O'Reilly's should let you borrow one for free. Or you could sweet talk the local dealer into doing it for free like I do, lol.
So yeah, go ahead and flush your cooling system and see if you have the same problem. The dieseling worries me, though. Like I said, pull codes then post up.

always a good idea to scann for codes once in a while, obd2 systems will store potentaial codes as well. make sure fans are working right, flush cooling system, change thermostat, check for debri in front of and between the radiator and a/c condenser.
