Default how hot is too hot?

I think it may be taking some time to get used to this thermostat. It must be different from what was in there before the water pump went out. Sitting in traffic, it got up this high. Shortly after the fans kicked on. As soon as I got on open road, it went back down to 185. I've had this car for nearly 3 years but I'm really just now getting to know it and what may or may not be normal with it.

Your fan isn't told to go on until engine temperature reaches 225~226 degrees.
The center mark on your gauge is 210. The mark above that is 235. Your needle is pointing between those two, which is 222.5 degrees (plus or minus, factoring possible slight gauge inaccuracies). You're perfectly normal, especially since the fan then went on. Getting out on the open road pushes fresh air through the radiator, instead of taking in non-moving boxed in heated air when driving in traffic.

LOL yeah no kidding. 1/4 is empty for me and she's below the half mark now. Skipped on driving it this morning, got to make a fuel run.

I would see if there is a way with HP Tuners or another tool to make your fan(s) go on sooner, if you are concerned.

Yeah it always comes right back under once I get her in open air or if I'm still the fan will come on for a minute or so. No worries
