Car Idles rough when wet?

I would advise you not to do that or atleast give the car time to fully dry. You never kno what condition your gaskets are in and you will find out the hard way doing that.

I'll try and not spray up underneath and see if it still does it. Would this be a spark plug problem more than likely? (hopefully)

I doubt that's it strictly a spark plug issue if at all. Somewhere water is interfering with your spark, could be moisture getting in your plug wire connections or could be somewhere in the wiring harness. Could be water messing with a sensor, hard to diagnose it over the net.
